MEET OUR CHEF

The Union Grille’s philosophy on food which is to harvest ingredients at the peak of availability for the best flavors and best offering.  We believe that season and ingredients dictate what we do with them.

The Grand Union Hotel is happy to welcome back Executive Chef Joshua Boyd to the Union Grille.  Joshua joined us from Champaign Illinois over 6 years ago when he moved to Montana with his wife Jayna and their three young sons.

He brings to the Grand Union a high level of talent and great diversity within the restaurant industry.  He prides himself in working with local farmers and establishing relationships within Montana to bring as many local products to the table as possible.

Joshua earned his associate degree in Culinary Arts from the Culinary Institute of America from Hyde Park, New York.   His diverse experience ranges from owning his own butcher shop, working in a high end Italian restaurant to a large catering company handling up to 600 people.

Chef Joshua and his family are extremely happy to make Montana their home and look forward to welcoming our guests and providing them with a true Montana regional experience.
